1. EGG PULUSU- -(Kodi Guddu Pulusu )
Ingredients
              Boiled eggs–5
             1 lump of tamarind (hand full)
              Green chillies—3
              Red chilli powder–1 tbsp
              2 medium sized onions(finely chopped)Egg Curry
             Few curry leaves
             Methi seeds(menthulu)–1/2 tbsp
             Jeera(jeelakara)–1/2 tbsp
             Mustard seeds–1/2 tbsp
             Ginger garlic paste–1 tbsp
             Turmeric –1/2 tbsp
             Salt for taste
            oil as Needed.

Preparation Method:

         Boil the eggs and fry them with 2 tbl spoons on oil and 1/2 spoon turmeric powder.
         Soak the tamarind in water for about 20 minutes and extract juice from it.
         Roast the methi seeds and the jeera lightly on a low flame and grind them.
         Now take a pan with 3 to 4 tbsp of oil and add the mustard seeds.
         After 5 minutes add the the green chilllies,curry leaves,ginger garlic paste,turmeric and onions and fry them .
         Then add the tamarind juice and allow it to boil .
         Now add the red chilli powder,the powder(methi seeds+jeera),coriander powder and salt.
         Finally add the eggs and allow to heat on a medium flame for about 5 -10 minutes.
         Serve the dish after 30 min so that the eggs get a good taste.

         You can pierce/groove the eggs before droping in to the gravy, so that the masala will get inside egg for more taste.

2. Mushroom Potato Masala
Ingredients

               Mushroom — 1 pak (250 gms)
              Onion — 2 Big finely chopped
              Tomato — 2 medium finely chopped
              Potato — 4 medium sized(boiled and Mashed)mushroom potato curry
              Curd — 1 cup
              Ginger garlic paste — 1 tea sp
              Red chilli powder — 1 tea sp
              Turmeric powder — 1/2 tea sp
              Coriander powder — 1/4 tea sp
              Salt to taste
              Oil — 3 tab sp
              Cumin seeds — 1 tea sp
              Clove — 3 no.
              Cardamom —- 3 no.
              Coriander leaves — 2 tab sp chopped.
              Tadka(popu) as required.
Preparation Method:

              Clean, wash and cut mushrooms in to 4 pieces.
              Wash and boil potatos, keep them mashed ina bowl.
               Heat oil in a pan add cumin seeds,clove cardamom and let them poup
              add finely chopped onion and fry till light golden color
              add chopped tomato and cook till tomato become soft .
              add Red chili powder,turmeric powder,coriander powder and
                 ginger garlic paste mix well
             add 2 tab sp water and cook till oil comes out from the sides of the pan
             add mashed potato and let it fry for some time.
            add curd and mix well , add mushroom pieces cook till mushrooms leaves water & all the water Evaporates.
            Now add salt to taste and 1 cup water mix well and let it cook till gravy becomes  thick
            add chopped coriander leaves mix well and remove from heat.
            You can also add cashews for rich taste.
